What You Need:

Cooking spray
2 eggs
Splash of water
¼ cup shredded mozzarella cheese

 

Crack 2 eggs in a bowl, add a splash of water (about 1 tablespoon) and scramble with a fork. This is the secret for fluffy eggs! Spray a small skillet with cooking spray and heat over medium heat. When pan is hot, pour in the eggs. Let cook for a minute and draw the eggs into the center of the pan with a spatula, swirling uncooked egg to edges of the pan. You want a large circle of set eggs (but not cooked all the way through) before you add the cheese.
Once the eggs are set, add the cheese and fold the eggs in half. Turn off the heat and let the cheese melt for about 1-2 minutes.
