Kate’s Kitchen with Teens: Layered Fruit Parfait with Homemade Granola

Wow, I bet you have never had a dessert or snack this tasty – your friends will be impressed!

Layered Fruit Parfait (Stove-top granola recipe below)

¼ cup blueberries

¼ cup raspberries

1 cup vanilla Greek yogurt

 

Gimme More Stove-top Granola (makes 2 cups)

1 tablespoon olive oil

1 ¼ cup quick cooking oats

¼ tablespoon ground cinnamon

2 tablespoons butter

3 tablespoon maple syrup (add extra honey if you don’t have this on hand)

1/8 cup brown sugar

½ cup sliced almonds

 

In a skillet over medium-low heat, add the oil, oats and cinnamon. Stir constantly for 10 minutes, so as not to burn the oats. Transfer to a plate. Add the butter, syrup and brown sugar to the skillet and stir until carmelized (browned). Add the oats back in and coat with the sugar mixture, cooking over low heat. Once done, add the almonds and remove from the stove top and cool. Store leftovers in an airtight container.

Assembly: Layer granola, yogurt, fruit in this order
