Kate’s Kitchen with Teens: Very Veggie Calzone
Welcome to Kate’s Kitchen with Teens.
These veggie calzones are fun to make with friends – and more delicious and less expensive than what you can buy at a restaurant!
Servings: 1 calzone (simply double the ingredients to increase the serving amount)
What you need:
1 package of pre-made pizza dough
1 tablespoon of oil
1 small onion, chopped
2 garlic cloves, crushed
1 cup of mushrooms, chopped
1 cup fresh spinach
½ cup roasted red pepper, chopped
1 cup skim milk ricotta
1 cup mozzarella
2 teaspoons of basil
Preheat the oven to 375 F. Divide the dough into 2 parts and roll into circles. In a skillet, over medium heat, saute onion in oil until soft and translucent. Add the crushed garlic and cook for 1 minute. Add the mushrooms, spinach and red pepper (with liquid) and cook until most water has evaporated. Remove from heat and set aside. Spread half of the ricotta onto each dough round. Sprinkle the basil on both rounds. Add half of the cooked veggies on top of the ricotta, spreading to cover half of the dough. Top with ½ of mozzarella cheese. Fold the dough over to make a half-round (dough will be on the outside, and veggies/cheese on the inside. Pinch dough edges together and press to secure with a fork. Do the same for the other calzone. Bake for 25-30 minutes or until the calzone is golden brown.
