Kate’s Kitchen with Kids: Marinated Pork with Kale Couscous

What you will need:
Pork
Pork marinade
2 cups couscous
kale
½ cup pine nuts
4 tab butter
2 cups chopped yellow onion
3 cups chicken stock
1.5 tsp salt
½ tsp pepper
½ cup parsley
How to prepare:
Roast pine nuts in small skillet until golden brown. Set aside.
Cut the onion into fine pieces and cook with the butter in a large saucepan until onions are translucent. Add the chicken stock, salt and pepper and bring to a boil. Once boiling, remove from heat and add couscous to pan. Cover and allow to steam for 5 minutes or until liquid is absorbed. During the first 3 minutes, tear off the leaves of the kale and chop into fine pieces. Add kale to couscous to steam the last 2-3 minutes the couscous is finishing. Add couscous to a serving dish. Add the pine nuts and parsley…and devour!
Preparing pork is like a “recipe without a recipe”. Simple drizzle your desired about of marinade on your pork in a skillet. Cook on medium-high heat about 3 minutes each side of the pork until cooked through. That’s it! Since the couscous and pork each take about 5-6 minutes, you can begin the pork once your chicken stock begins to boil and your meal will completed at the same time!
