Kate’s Kitchen with Kids: Roasted Tomatoes with Pesto

Ingredients:
2 lb tomatoes
3 tab oil
2 tsp oregano
salt
½ tsp pepper
½ cup pesto
½ cup parmesan cheese
Preheat oven to 425 degrees. Cut tomatoes into 1/2 inch slices. Top with oil, oregano, salt and pepper. Bake for 10 minutes. Remove from oven. Add the pesto and parmesan cheese. Bake for another 10 minutes. That’s it! Enjoy.
