Kate’s Kitchen with Kids: Super Simple Salad Series
There is no real “recipe” for your salad toppings. Simple use the items that suit your taste buds for your salad toppings, using the below “ratio” guidelines. Here are a few ingredients we recommend: arugula, spring mix, spinach, walnuts, pine nuts, strawberries, pomegranate, grapes, dried cherries, apple/pear, blue cheese, parmesan, dressing: olive oil, red wine vinegar, lemon juice, honey, S&P, mustard
Salad ingredients:
– 8 oz total of your lettuce or lettuce-equivalent will serve 6 people: spring mix, arugula, spinach
– use one “small” version of any palm-sized fruit or veggie (ie. 1 whole onion, 1 whole pear, sliced, 1 whole apple
– use approximately 2 small handfuls of any smaller item (grapes, sliced strawberries, mushrooms)
– “sprinkle” any of your smaller items to taste (I like to do nuts individually, just in case anyone has allergies): nuts, dried cherries, cheeses, etc
Dressing:
– 2 Tbsp olive oil
– 1 Tbsp red wine vinegar
– 2 tsp lemon juice
– 1 tsp honey
– ½ tsp mustard (yellow or honey mustard)
– salt and pepper to taste
